St. Luke’s cafeteria features my vegan lasagna!

My spinach, mushroom and onion lasagna (the cover shot on my cookbook) was featured as the Meatless Monday entree in St. Luke’s cafeteria today. It was so nice meeting everyone and was so satisfying to hear the feedback from those who ordered the lasagna. No one could believe it did not have cheese in it! That was the most satisfying to me!
