I bought your cookbook today since I've decided to go meatless once a week. The "Where's the Beef Chili" was a huge hit. My 3 1/2 year old daughter ate a huge bowl and my husband (the hunter:aka meat lover) absolutely loved it. I've started a grocery list because I'm eager to try more of your delicious creations.
I made the chili and it was DELICIOUS! I served it over a little bit of ditalini. The biggest surprise to me was that I didn't miss the meat one bit. Just enough kick to it, filling but not the ("sick, stuffed") feeling I usually end up with when I'm done eating.
I look forward to making many more dishes and can't wait to make dishes for the kids when they're here to visit.
Hi Jill, just wanted to let you know that when we got home tonight we picked out a picture that looked good and cooked the where's the beef chili. and it was great. Just a hint of cinnamon was a real surprise. Carol and I have taken solemn oath that we will eat healthy this year, so your book came at the perfect time. Jill I am so excited about your new cookbook. I received it a couple of days ago. I immediately made a trip to town to stock my larder. First I made the layered dip. It is FANTASTIC. I don't miss the cheese. Next I thought I would do the shepherds pie, something that Bobby will eat. we're having that tonight. My mouth is just watering for several of the other dishes. One new one each day 🙂 Your recipes are so easy to follow. Stress free cooking. Yes, one can eat healthy and not be a slave to the kitchen. So important for busy Moms and Dads. Thank you for publishing such a beautiful cookbook.
My husband Don, age 45, just had his second Heart Attack! I was a wreck and filled with dread and worry. After his surgery the doctor told us that Don needed to start eating a more plant based diet! I understood the idea of more vegetables as a "side dish", but make an entire meal of it? Mind you, the only thing green my husband would eat was lettuce he hated all veggies except for corn and potatoes. Go figure. I was determined to educate myself on this and the ONLY person that came to mind was Jill Skeem. She met with me right away. I was an emotional wreck as she calmly took all of his history. I told her that Heart Disease RAN in his family. Don's dad had his first heart attack at 43 and had died in his early 50's. It was a given that Don would follow in his path. I felt hopeless and helpless. What Jill said to me next will burned into my mind, heart and soul FOREVER! She looked into my eyes and said: Of course it runs in his family! We eat as we are taught from generation to generation! It doesn't have to be this way. YOU can change that TODAY! Talk about a light bulb moment. Jill gave me her cookbook and educated me on our food sources. How to eat, cook and live all over again. Did I mention that after Don's open heart surgery he had gained close to 50 pounds, had high blood pressure and was in a very dark place. His cholesterol was pushing close to 700! One year later he has dropped 40 pounds. His cholesterol is 154 and his blood pressure is perfect!
Jill's recipes are super simple to make. One of our favorites is a Mock Chicken Soup. It really tastes like Chicken soup. Amazing! I am so excited to get her new Cookbook!

When I was living in Idaho I worked with my brother who did all the photography for this cookbook. I did most of the food styling at the photo shoots and I fell in love with Jill's food. It's hard to believe is so healthy being so easy to prepare and so yummy!
I had the pleasure of working on Jill's cookbook. We spent over 3 1/2 years shooting all the photography. I got to personally try all the dishes and I must say for NOT being a vegan I loved nearly every recipes Jill had prepared! I will be buying a bunch of theses cookbooks for my friends and family!
