Healthy Easter Side Dishes

Potato Salad   Easter is almost here and what are you going to make for your Easter dinner? Many people love their traditional side dishes such as mashed potatoes or potato salad but are trying to eat healthier.

Well, you can still have your mashed potatoes but without all of the saturated fat and cholesterol! Just reserve the salted, cooking water that you used to cook your potatoes in and add it gradually while you are mashing them until you reach the consistency that you like. Taste them and then salt & pepper accordingly. You can also add a bit of olive oil at the end for richness or top them with caramelized onions and chives.

If potato salad is your side dish, just use an olive-oil based dressing with stone ground mustard, fresh or dry dill, salt & pepper and you won’t have to add the sour cream or mayo. It is still delicious!

A great way to get everyone to eat their veggies is to roast them. Cut your desired veggies into larger chunks, coat them with olive oil, salt, pepper & rosemary and put in a 400 degree oven for 20 -25 minutes, turning them half way through the cooking time until they are fork tender. Roasting brings out the carbohydrates of the veggies which makes them even sweeter and more delicious!
