Healthy Easter Side Dishes

kmvt_Rise_and_ShineI was asked to appear on KMVT’s morning show, Rise & Shine, with Danielle and Nick Kosir to make healthy mashed potatoes for Easter.  On page 100 of my cookbook, I have a recipe for mashed potatoes with caramelized onions. Apparently Danielle is a mashed potato connoisseur, so I started to get a bit nervous…would my mashed potatoes stand up to the ones she traditionally makes with butter, cream and sour cream? Turned out she loved them! She couldn’t believe how yummy they were without the saturated fat and cholesterol.

I also brought some roasted potatoes for those who want to make them. Roasting vegetables brings out the carbohydrates of the vegetables which gives them a lot of flavor. They are SO easy to make.  Just coat them in olive oil, salt, pepper & rosemary or oregano and roast in a 350 degree oven for 25-30 minutes until they are fork tender. Stir occasionally so they cook evenly and don’t burn.

So no matter what you make, sit down and take your time to eat your meal. You will enjoy your meal so much more and will not overeat.
