Chocolate Bark

Sometimes people just want a bit of chocolate. What’s better than making your own?? You can use any type of chocolate you like…there are vegan chocolate chips, semi-chocolate, dark chocolate etc. and you can add whatever you prefer…raisins, dried cherries, roasted almonds etc.

Ingredients:

1 package chocolate chips (dairy, nut & soy free)
1/2 cup roasted almonds, roughly chopped
1/2 dried cherries, chopped
parchment paper

Method:

1. Set up a double boiler (a glass bowl on top of a saucepan with boiling water) and add the chocolate chips and wait until they are melted.
2. On the backside of a piece of parchment paper, draw a large rectangle.  Pour the chocolate out onto the parchment paper and use an offset spatula to spread the chocolate to fit the rectangle.
3. Start to press the almonds and cherries into the chocolate. Put onto a baking sheet and put in the refrigerator to harden.
4. Before serving, break the chocolate into pieces and serve in a beautiful bowl.
