Roasting vegetables brings out their carbohydrates so they are sweet and delicious! The richness of the oil makes them very satisfying and a perfect choice for a Thanksgiving side dish. The best part is you can roast any vegetable you like. Just make sure they are cut the same size and are as hearty. So, if you choose lighter veggies such as green peppers, just roast them for half the time as say a carrot or potato.
Ingredients:
Choose any veggies you like. Examples below:
- Parsnips – chunks
- Sweet Potatoes – chunks
- Brussel Sprouts – halved
- Onions- halved or quartered depending on size
- Mushrooms
- Olive oil
- Sea Salt
- Black Pepper
- Rosemary
Method:
1. Pre-heat oven 400 degrees. Put veggies in a large bowl and toss them with olive oil, sea salt, black pepper and rosemary.
2. Spread them out evenly on a baking sheet and put in oven for 30 -35 minutes or until fork tender.
3. Turn half way through the baking so they don’t burn on one side.
You can serve these on their own or add to a salad. Delicious!
